the one with quick and easy enchiladas

I love easy recipes! Today is a family favorite, quick and easy enchiladas. This recipe only takes 5 ingredients thanks to some mixed veggies from Trader Joe’s. You can easily make these with just chicken and cheese, but this is a really easy way for me to sneak some veggies into the kiddos! If you don’t want to use the veggies I use then just use your favorites! You can also choose whatever cheese you have on hand or enjoy! But I find the Mexican mixes of shredded cheese or just plain ol’ mozzarella work best. Sometimes, if I have queso on hand I’ll add that to the top instead of just shredded cheese. And, of course, sour cream always adds a nice little extra, but that makes 6 ingredients so if I don’t have it I don’t worry about it. Keep it simple with the rule of 5!!

10 flour tortillas

2 cups cheese

5 cups shredded chicken

1 jar of your favorite salsa

1 can corn, peppers, black bean mix (trader joes)

  1. First, dump chicken and salsa in crockpot on high for 4 hours or low for 6.
  2. dump veggies in crock pot for at least the last half hour – i usually do about an hour
  3. Then fill each tortilla with half cup of chicken and veggie mix, top with handful of cheese, roll up each tortilla and place in oven safe dish
  4. top all tortillas with more salsa and at least 1 cup of cheese, bake at 350 for 20 minutes
  5. Finally, enjoy!
