I love easy recipes! Today is a family favorite, quick and easy enchiladas. This recipe only takes 5 ingredients thanks to some mixed veggies from Trader Joe’s. You can easily make these with just chicken and cheese, but this is a really easy way for me to sneak some veggies into the kiddos! If you don’t want to use the veggies I use then just use your favorites! You can also choose whatever cheese you have on hand or enjoy! But I find the Mexican mixes of shredded cheese or just plain ol’ mozzarella work best. Sometimes, if I have queso on hand I’ll add that to the top instead of just shredded cheese. And, of course, sour cream always adds a nice little extra, but that makes 6 ingredients so if I don’t have it I don’t worry about it. Keep it simple with the rule of 5!!
10 flour tortillas
2 cups cheese
5 cups shredded chicken
1 jar of your favorite salsa
1 can corn, peppers, black bean mix (trader joes)
- First, dump chicken and salsa in crockpot on high for 4 hours or low for 6.
- dump veggies in crock pot for at least the last half hour – i usually do about an hour
- Then fill each tortilla with half cup of chicken and veggie mix, top with handful of cheese, roll up each tortilla and place in oven safe dish
- top all tortillas with more salsa and at least 1 cup of cheese, bake at 350 for 20 minutes
- Finally, enjoy!
