the one with raspberry crumble bars

Today I just want to drop by and delivery a quick and easy dessert for raspberry crumble bars! They’re like little raspberry cobblers but you don’t have to use a fork to eat! Plus, they’re super pretty!

  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned whole-rolled oats
  • pinch salt, optional and to taste
  • about 12 ounces raspberry preserves – you could use a premade pie filling too


  1. Preheat oven to 350F. Line an 8-inch square pan with aluminum foil and spray with cooking spray; set aside.
  2. To a large, microwave-safe bowl add the butter and heat on high power to melt, about 1 minute.
  3. Add the sugars, vanilla, and whisk to combine.
  4. Then add the flour, oats, optional salt, and stir to combine. Mixture will have some larger, well-formed crumble pieces as well as some sandier, dryer bits.
  5. Set 1 heaping cup mixture aside to be sprinkled on later as crumble topping.
  6. Transfer remaining mixture to prepared pan, and using a spatula or your fingers, hard-pack the mixture to create an even, smooth, flat crust.
  7. Then evenly spread the raspberry preserves over the crust making sure there’s complete coverage. Preserves should be about 1/8-inch to 1/4-inch thick.
  8. Evenly sprinkle with the reserved heaping 1 cup crumble topping mixture. Before sprinkling, I squeeze the mixture in my palm to encourage bigger crumble pieces to form.
  9. Bake for about 30 to 32 minutes, or until edges are set and center has just set and is lightly golden browned. Place pan on a wire rack and allow bars to cool for at least 2 hours before slicing and serving. Bars will keep airtight at room temperature for up to 1 week or in the freezer for up to 6 months.

May’s series was easy for me to decide on. All I had to do was look in my closet and I saw tons of bright colors. So considering summer is practically here a series full of bright colors is perfect. Actually narrowing it down to only 5 outfits was rather difficult. Thank God May has an extra Monday! Almost all of the other outfits I’ve shared this month have been older bright colors. But this one is all new! The one shoulder trend was very popular when I was in high school. I love that it’s back so I had to grab one at old navy for this summer!

the one with Jack’s 8 month update

Here’s Jacker’s 8 month update . . .

Height: 30 inch 97th %

Head: 17.5 inches – 75th %

Nicknames: Dumplin, buster, jack jack, sweet pea, jackers

Sleep: After terrible sleeping for 2 months, he’s slowly getting better. We started putting him to bed once it was dark (which was later than his original bedtime), letting him nap less, and I put bergamont in his diffuser every night. He sleeps from 830pm to 730am and most of the time he wakes up twice. But with our improvements the first wake up isn’t until between 1-3. So he only wakes up once while I’m asleep. Let’s be honest that is the most helpful thing here.

We tried sleep training him, but since he’s exclusively breastfed I’m concerned those nighttime feedings are needed to be sure he’s getting enough food – which is common with breastfeeding babies I’ve read. There are several ways I could get more food to him during the day, (pumping, supplementing, more often) but I don’t want to do any of those for various reasons unless necessary. since he’s slowly getting better we’re going to just deal with it.

Feeding: Still a nursing champ! So proud of my boy and myself. 8 months strong!! We’re also still doing really well with solid foods. I started giving him 4 ounces of water a day and he started pooping more 🙂 It’s a struggle to get him to take the water tho. He sometimes won’t take it unless there’s some sort of juice or sugar in it, and I don’t like giving him sugar or sugary juice. So we also added prunes every 3 days. I hate prunes so I hate giving them to him, but I finally gave it up. He LOVES them so who am I to judge. Plus he poops every 3 days now. We’re introducing 3 meals a day this month. So we’ll see how this goes.

Fun Stuff: He fully sits up on his own for extended period of times, can support his weight (just doesn’t have the balance to stand yet), he’s been fully rolling everywhere for a while but I’ve been trying to get him to crawl so this has somehow taken off even more, he can lift himself up to crawl and will sometimes army crawl – but no crawl yet, he talks and screams and squeals all the time, he’s learned to love reading books (he used to get bored), and bath time is now even better that he can sit up. We had our 2nd to last eye doctor appointment, and no glaucoma (which my husband was born with) 🙂 One more appointment just to confirm and we’re all done.

The best thing about this month is he says ‘mama’ I’m not considering it his first word because he 100% doesn’t know what he’s saying or that it’s my name. However, it’s the one word/noise he says consistently and will clearly say back to you when you ask him to. He’s making some sort of noise  90% of the time he’s awake and he’s saying ‘mama’ or ‘mommommommom’ 60% of that. And I can die happy.

May’s series was easy for me to decide on. All I had to do was look in my closet and I saw tons of bright colors. So considering summer is practically here a series full of bright colors is perfect. Actually narrowing it down to only 5 outfits was rather difficult. Thank God May has an extra Monday!  Surprisingly, quite a few of my bright colors are older. This tank is one of them! It’s from the gap a few years ago. I rarely spend a lot of money on trends, but neon is one of those that goes in and out quite often. And neon’s in spring is one of my favorite trends!

Another thing that is one of my favorites are these espadrilles! My grandmother used to wear espadrilles all the time. So I started to think of them as old lady shoes. But all of a sudden I saw these beauties and decided to jump on the espadrille train. I’m never going back you guys. These are maybe the most comfortable shoes I’ve ever worn. I mean flip flops are obviously more comfortable, but these shoes are super great.

5 pieces 1 outfit: baseball cap

Hey friends! 5 pieces 1 outfit is a twice monthly series where we feature 5 pieces that bring together 1 perfect outfit. It doesn’t take a lot of time, money, and or pieces to create a fashionable look that anyone can create. 5 pieces is all you need to make another outfit killer. First, I find it’s best to have a theme so you have a place to build from. That can be a color combo or maybe even an event. But most of all you just need a good base piece. This week’s theme is a baseball cap.

Do you guys wear watches everyday? It seems to be something most people do. But I rarely wore watches before I became a mom. Of course, now everything is on a time schedule. I’m always checking the clock to see if it’s time for a diaper change or time to each or time to go swim class or time for nap! This meant I needed to get a new one. Shopping is never disappointing, but I had a few requirements.

Here in Florida it officially feels like Summer, and yet they tell me it’s Spring. So what that means is  – you sweat as soon as you walk outside. And it’ll only get worse from here until September. So I needed something breathable to limit the amount of sweat. Also something lightweight to not weigh me down and make me feel even more uncomfortable. But I also wanted something modern, fun, chic, and fairly neutral. Jord wood watches was the perfect place to go for all those requirements.

the one with the lime green maxi skirt

May’s series was easy for me to decide on. All I had to do was look in my closet and I saw tons of bright colors. So considering summer is practically here a series full of bright colors is perfect. Actually narrowing it down to only 5 outfits was rather difficult. Thank God May has an extra Monday!  Surprisingly, quite a few of my bright colors are older. This lime skirt is one of those! It’s two years old so all the skirts below are not the exact. Of course, no one else makes a lime green maxi skirt. It’s an odd color, but the ones listed are great.

But everytime I wear it I get major compliments, and it’s easy to dress. It’s even brighter in person so you have to tone the top down with neutrals. This jacket is too hot for Florida right now, but I know most places are still spring jacket weather. This is the perfect jacket for that! Plus it’s vegan leather . . . I feel like Leo would be so proud of me which is what I base half of my decisions on.

the one with diy mother’s day gifts

This year’s diy mother’s day gifts were quite easy. Is it always this easy once you give them grandchildren? Do I just give them stuff Jack made every year? That was the routine this year and I can’t see it stopping. Especially since little man LOVED getting to play with paint. He mostly tried to eat it, but he did play long enough to get it all over the small canvas. And he had a huge smile on his face the whole time.

It’s pretty clear what we did. We just put him in his high chair with a 8×10 canvas that I had squirted some paint on. Then he went to town for awhile on each one. I basically let him go on one until he was over it, then we took a break before doing the other one. Once it was all dry I used mod podge to secure a picture of him painting in the middle. Viola! Put this down as a mom brag post – or an idea for a last minute gift if you need one.
