I love apples. There’s really no other words for it and nothing else to say. I just love apples. So when apple season comes I try to make all sorts of apple things. Since we started doing an 80% paleo diet apple desserts have been hard to come by, but I did find one that’s quite delicious.
ingredients:
3-4 apples
1 tablespoon cinnamon
3 cup almond flour
1 tablespoon baking powder
1 teaspoon baking soda
½ teaspoon sea salt
1 cup applesauce
3 tablespoons coconut oil, melted
4 eggs
1 cup coconut sugar
2 teaspoons vanilla
Steps:
Preheat the oven to 350 degrees
Wash, core and cut apples into chunks
Add 1 tablespoon cinnamon, mix, and set aside.
In a medium bowl, sift almond flour, baking soda, baking powder, and sea salt. Set aside.
In a large bowl, whisk applesauce, melted coconut oil, eggs, coconut sugar, and vanilla.
Pour the dry ingredients into the wet ingredients and mix well
Pour half of the batter into the tube pan, then layer with ½ of the apple chunks.
Pour the remaining batter on top of it and add one last layer of the remaining apples.
Place in the oven and bake for 45 minutes
