Meatballs and Zoodles

This is quickly becoming one of my favorite meals! I LOVE spaghetti and meatballs . . . and I have a really good recipe that I adapted from my mom’s and what I like on my own. But with our new ‘inspired by paleo’ lifestyle grains = pasta so I don’t have it unless it’s a treat. This recipe is the next best thing, and honestly I might even like it better. (people who know me personally are freakin’ out right now at that statement) Here’s what you need . . .

1lb of ground beef

1 egg

1tspn garlic powder

1 tspn paprika

salt and pepper to taste

4 zuccini

1 cup marianara sauce

Preheat your oven to 350 and mix everything but the zuccini and sauce in with the ground beef just like a regular meatball. Use a spoon or an ice cream scoop to make 12 balls or 6 big balls – place in a foil lined baking sheet. Pour the marinara sauce over each meatball evenly and bake for 20-30 minutes.

While the meatballs bake, use your veggie pealer to peal up all the zuccini. Heat some oil or cooking spray on a skillet and cook like you would sliced zuccini (about 5 minutes on medium heat flipping/stirring as you go). I like to add some lowry’s seasoning salt in there to give it some extra flavor. Serve the meatballs and extra sauce over the zuccini – just like spaghetti . . . and enjoy!
