This is one of my favorite salads to make when Scott and I want a quick, easy, healthy, but still delicious dinner. I’m sure there are things similar out there, but I came up with my version on total accident. I never thought fish and salad would taste good when mixed together, but serving fish with a salad on the side was just basic. One night when preparing leftovers for the next day’s lunch, I accidentally mixed them all together. I didn’t even realize it until I got to work the next day! I almost didn’t eat it, but my boss at the time, Stacey, convinced me to go ahead and eat it. It was soooo good! Now it’s more basic to me than fish and a side salad. It’s something I can change up with what we have on hand or just what we’re feeling. We can even make our own in separate bowls if we’re not feeling the same toppings – like when I want nuts because Scott hates them!
My favorite toppings are dried cranberries, sunflower seeds or almonds, cucumbers, and of course, cheese – usually feta!
